Popcorn Cornmeal Cornbread

I was thinking the other day… Can you use a coffee grinder to make cornmeal… turns out yes you can I used the coffee grinder I use to grind flax seeds so there should not be much coffee in the cornbread… Here is my recipes…

Ingredients

  • 9 ounces of popcorn, ground into meal in a blender, mill or coffee grinder
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 2 cups buttermilk
  • 2 tablespoons shortening, bacon fat, or vegetable oil

Directions

  1. Grind Popcorn – I use a clean coffee grinder – do several small batches and only grind for a few seconds at a time to avoid heating the cornmeal – warning it will be noisy
  2. Place 10-inch cast iron skillet in oven on middle rack and heat to 450°F. Mix cornmeal, flour, baking powder, and salt together in a large bowl until evenly incorporated. In a medium bowl, lightly beat egg. Whisk in buttermilk.
  3. As oven nears 450°F, remove skillet and add fat. Swirl fat to evenly coat the bottom.
  4. Add egg and buttermilk mixture plus any excess melted fat from skillet to dry ingredients and stir until just combined. Mixture will be lumpy. Pour batter into hot skillet and return to oven, bake until top is just golden and edges have browned and pulled away from the side of the pan, 20 to 25 minutes. Allow to cool slightly and serve warm.

Notes :: I used regular 2% as I did not have buttermilk. If you prefer sweet cornbread add 2/3 cups of sugar
